I am a daughter caring for elderly parents. I am a sister who is extremely proud of her brother and sister. I am an aunt who loves my nieces more than I ever thought I could love anyone. I am a "no-problem" friend. I am the smiling face at the front desk, greeting everyone in a positive manner. I hopefully encourage people to find joy and peace in the midst of adversity. I am a responsible member of my community. I am told I sometimes look at the world through rose-colored glasses. Red is my favorite color. :) I am happy to be nappy! There's nothing better than a nice bubble bath, unless there's pumpkin cheesecake waiting for me when I get out. :) I know the Source of my supply. I am grateful.

Soup Is A Bowl Full of Love

I LOVE to cook, especially in the Fall and Winter months.  Meals are so rich with flavor and earthiness.  I'd like to share my favorite Chicken Soup recipe with you.  I hope your family enjoys it as much as mine.

PAMMIE'S CHICKEN SOUP

1 whole chicken
3 stalks of celery, chopped
1/2 medium onion, chopped
2 cups baby carrots, chopped
1 package of exotic mushroom blend (if you can't find it regular mushrooms will work)
1 bag of baby spinach, stems removed
1 bag of frozen mixed Vegetables for Gumbo
1 box of Uncle Ben's Long Grain & Wild Rice
1 can Cream of Chicken soup

Fill a large pot half way with water.  Add celery and onion to water.  Season and split Chicken in half.  Add to water.  Cover pot and boil on medium heat until Chicken is done.

Prepare Wild Rice according to package directions.  Set aside.

Remove Chicken from water when done.  Remove broth, but leave pot half full.  Add carrots. Cook on medium heat for 10 minutes.

Remove skin from Chicken, pull meat from the bones.

Add frozen vegetables and Chicken to broth. Cook until vegetables are done.  Add cooked Wild Rice, mushrooms and Cream of Chicken soup.  Mix well.  Add spinach.  Simmer.
