I am a daughter caring for elderly parents. I am a sister who is extremely proud of her brother and sister. I am an aunt who loves my nieces more than I ever thought I could love anyone. I am a "no-problem" friend. I am the smiling face at the front desk, greeting everyone in a positive manner. I hopefully encourage people to find joy and peace in the midst of adversity. I am a responsible member of my community. I am told I sometimes look at the world through rose-colored glasses. Red is my favorite color. :) I am happy to be nappy! There's nothing better than a nice bubble bath, unless there's pumpkin cheesecake waiting for me when I get out. :) I know the Source of my supply. I am grateful.

The Day I Learned to Listen to the Spirit

It was a regular Saturday. I ran errands, made lunch for my Mom... My first post on Facebook was "I Expect Greatness". I meant that sincerely.

In preparation for Thanksgiving, I spent some good time in my kitchen.  When I have an opportunity to do that, all is well in my world.  It was my goal this weekend to prep and freeze my Dressing and Mac/Cheese and bake my Pumpkin Cake. Time Management BABY. Then on Turkey Day, all I have to do is roast my bird and make my veggies. IT'S ALL GOOD.

But, oddly, throughout the day, That Small Voice kept saying "stay home".  Me: "I can't do that, I need support Family". So even with the admonition, I did MY WILL.  I got cute, wrapped my gift and headed out into the world.

Five minutes from my house...BAM !!! A Young Sister came speeding through a light and I was fortunate enough to stop her.  We did the police/EMS thing and went our separate ways.

Well, The Father tried to help me avoid the accident...but He saw the intent of my Heart. I love to support my Family.

My continuous prayer was that my car could be fixed.  It is going to be paid in full April, 2013, and the last thing I wanted was another car note.  I needed the time to put some money in my savings account.

The Father, to the dismay of many, answered my prayers.  "Why would the insurance company pay more to have your car repaired than what it is worth"?, was the question from many.  Well, I know why, simply because I asked. Not only will I be car-note free, but I will have new car parts !!!!!!!!!! They will take me to a point when I'm comfortably ready to get another vehicle.  Thank You, Father.

Now, thanks to insurance, I am experiencing a stress-free restoration.

Soup Is A Bowl Full of Love

I LOVE to cook, especially in the Fall and Winter months.  Meals are so rich with flavor and earthiness.  I'd like to share my favorite Chicken Soup recipe with you.  I hope your family enjoys it as much as mine.

PAMMIE'S CHICKEN SOUP

1 whole chicken
3 stalks of celery, chopped
1/2 medium onion, chopped
2 cups baby carrots, chopped
1 package of exotic mushroom blend (if you can't find it regular mushrooms will work)
1 bag of baby spinach, stems removed
1 bag of frozen mixed Vegetables for Gumbo
1 box of Uncle Ben's Long Grain & Wild Rice
1 can Cream of Chicken soup

Fill a large pot half way with water.  Add celery and onion to water.  Season and split Chicken in half.  Add to water.  Cover pot and boil on medium heat until Chicken is done.

Prepare Wild Rice according to package directions.  Set aside.

Remove Chicken from water when done.  Remove broth, but leave pot half full.  Add carrots. Cook on medium heat for 10 minutes.

Remove skin from Chicken, pull meat from the bones.

Add frozen vegetables and Chicken to broth. Cook until vegetables are done.  Add cooked Wild Rice, mushrooms and Cream of Chicken soup.  Mix well.  Add spinach.  Simmer.
